Harvest immature flower buds to make traditional capers. Semi-mature fruits (caperberries) and young shoots can also be preserved. Capers have a sharp, tangy, slightly peppery flavor that enhances pasta, pizza, seafood, meats, salads, and Mediterranean cuisine.
💡 Care Tip:
Soak seeds for 24 hours. Cold stratify 60–90 days at 40°F in a moist (not wet) medium. Sow 1/4 inch deep and keep lightly moist during germination. Excellent drainage is essential — avoid overwatering.
