Immature flower buds are harvested and pickled to create capers. Semi-mature fruits (caperberries) and young shoots can also be preserved. Flavor is sharp and piquant, similar to mustard and black pepper — perfect for pasta, salads, fish, and Mediterranean dishes.

💡 Care Tip:
Soak seeds for 24 hours. Cold stratify 60–90 days at 40°F in a moist (not wet) medium. Sow 1/4 inch deep and keep lightly moist until established. Avoid overwatering — excellent drainage is essential for success.
